Enjoy an immersive culinary experience in San Cristóbal de las Casas, blending Northern Mexico’s open-fire cooking traditions with the mysticism of corn, cacao, and the endemic flavors of Chiapas.
We begin in the iconic Plaza del Cerrillo to explore a local market, where we will handpick the fresh ingredients, chilies, and herbs for our session. Afterward, we will head to our kitchen workshop to welcome you with a shot of Pox (a ceremonial Maya spirit) or a refreshing Tascalate. Guided by our chef, you will roast ingredients on the comal, grind salsas in a molcajete, and make heirloom corn tortillas from scratch, blending Northern and Southern flavors into a seasonal three-course menu. Finally, we will share the feast around a communal table with fresh fruit waters and traditional café de olla.
The experience includes a bilingual chef host, market tour, organic ingredients, kitchen utensils, a full three-course meal, traditional drinks, and a digital recipe book. Come with curiosity, an appetite, and a desire to connect through food.
